What cold water gives you

North-west Tasmania sits in cold water, and cold-water shellfish hold their sweetness better than anything shipped up from warmer grounds. Freezing on the day of landing simply holds what the water already gave the product.

Latrobe is close enough to Devonport that an order packed here reaches the mainland on the next Bass Strait sailing rather than waiting for a consolidated run. Each box is lined and filled with dry gel ice measured to its weight, then labelled with the species and packing date.
